I'm trying to setup a profile that keeps 8 versions of the backup files. My settings are shown here in the below screenshot.

My problem is the profile is keeping many more copies than the configured 8, as shown in the above screenshot that highlights 15 copies of 'Budget'.

thanks for the report. In my tests, this works correcty. Can you send a log file to support@syncovery.com so I can see your complete settings and any possible errors deleting the file?
