Is there any way Syncovery can wake my PC from sleep to run a profile?

not currently. Maybe if you use a Windows Scheduled Task.
You can invoke a job via command line like this:
"C:\Program Files\Syncovery\SyncoveryCL.exe" /RUNX="Profile Name" /P /T
/P means progress is reported to the GUI (if it isopen)
/T means the job is run in a separate thread
